Sweet Susy is on her bike. She is waiting for her friend Salty Sam to come playing outside . It always takes ages before Sam gets ready to go. ‘Are you ready now!’ asks Susy impatient once more. Today they planned to go to one of Susy’s favorite place: the Bees Palace. Susy loves bees. She loves observing their beautiful dances. And of course she loves the sweet nectar that they produce: she has always a spare jar of honey in het kitchen pantry… She can’t help it! Finally Sam appears at the door on his step: they can leave now. In twenty minutes they get to the palace where a big bunch of black and yellow baloons is hanging. ‘What are they for?’ asks Susy. She doesn’t have time to finish her question that all her Yummie friends jump out behind the palace: ‘Surprise!’ they shout all together. Susy can’t believe it” ‘what a beautiful surprise party! First of all they go to say ‘Hi’ to the Bees. Then Uma Umami grab a bag from het backpack and says: today we plant some tasty flowers for the bees!’. The bees in the palace begin to dance around to thank the Yummies. In few weeks the flower will grow and the bees will be able to taste how nice they are. But the bee have also a nice surprise for Susy and her friends. Here they come now, flying, carrying a wooden crate full of tasty flowers cakes. Mhhh…delicious!

** Happy Bee cake **
For 12 flowers
what do you need:
For the base:
70 gr havermout flakes
40g coconut flakes
150 gr mix nuts
juice of 1/2 lemon
zest of ½ lemon
pinch of sea salt
For the filling:
250 gr raw cashew nuts (soaked in water overnight)
1 tea spoon of vanilla extract
zest and juice of 1 lemon
50 gr melted coconut oil
5 table spoon of honey
200 gr blueberries
125 gr raspberries
1 springform of 26cm diameter
flower shape cutters 5cm high
how do you make it:
1 put all the ingredients for the base in the mixer and action it till you get medium/small grains
2 push the grainy dough at the bottom of the springform
3 put all the ingredients for the filling in the mixer and put it on till you get a smooth cream
4 pour the filling into the springform and put it in the freezer for 2 hours
5 take the cake out the freezer and cut out the flowers
